Ingredients
  

  • 1 cup – Old-fashioned rolled oats
  • ½ cup – Pumpkin purée not pumpkin pie filling
  • ½ cup – Natural peanut butter
  • ¼ cup – Honey or maple syrup
  • 1 tsp – Pumpkin pie spice
  • 1 tsp – Vanilla extract
  • cup – Mini chocolate chips
  • 1 tbsp olive oil

Equipment

  • 1 Mixing Bowl
  • 1 Measuring cups
  • 1 Spoon or spatula
  • 1 Baking Sheet or plate (for chilling)

Method
 

  1. In a large mixing bowl, add the rolled oats, pumpkin pie spice, and mini chocolate chips.
    1 cup – Old-fashioned rolled oats, 1 tsp – Pumpkin pie spice, ⅓ cup – Mini chocolate chips
  2. Add the pumpkin purée, peanut butter, honey (or maple syrup), vanilla extract, and olive oil.
    ½ cup – Pumpkin purée, ½ cup – Natural peanut butter, ¼ cup – Honey or maple syrup, 1 tsp – Vanilla extract, 1 tbsp olive oil
  3. Stir everything together until fully combined and sticky.
  4. Place the bowl in the refrigerator and chill the mixture for 15–20 minutes to make it easier to handle.
  5. Using a spoon or small scoop, roll the mixture into bite-sized balls.
  6. Store the energy bites in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
